I have John Gruber at Daring Fireball to thank for this, but I really like the iOS app Trackables, which takes your Health app data from your iPhone and/or Apple Watch and summarizes it in a nice trend graph.

It gets its data straight from the Health App, and does not share it anywhere else. It also can put data on a widget, so you can see it without opening the app. It also supports multiple languages.
I think there’s a lot of room in this space for private health dashboard apps, and this may be a killer application for Apple’s on-device AI at some point to help flag concerns to bring up with one’s doctor.
Trackables is available on the iOS App Store. https://apps.apple.com/us/app/trackables-health-dashboard/id6745567488
